We love risotto, and one of my favourites is Mushroom Risotto. I’ve used Jamie Oliver’s recipe for many years, but recently I discovered your packets of ready to cook mushroom risotto, and decided to give it a try.
It’s very good, and we’ve enjoyed it a couple of times now.
However, I do add my variations to it;
I add 500ml Maggie Beer Chicken stock to 500ml water.
When I made it last night, I also added some dried Forest Mushrooms (from our local deli). And would also consider adding fresh mushrooms sometimes.
Two heaped teaspoons of garlic paste – fresh homegrown garlic when I have it.
Just before serving, I add the juice of one of the lemons from my miniature Meyer Lemon tree.
And finely grated Parmesan Reggiano to sprinkle lavishly once the risotto is served.
Sometimes I also add the grated cheese to the mix with the lemon juice, which boosts the flavour, and gives us a delicious meal! The lemon juice is always an absolute must…
I have also cooked the Country Style Risotto, which was very nice!
